Second ~ The traditional session. You take a day or two to cook and you will enjoy the fruit of your labors for WEEKS!! During a traditional session you usually cook several different kinds of meat and about 2-6 weeks worth of meals.
Third ~ Mini Sessions.. usually of a certain type meat. These are nice when you catch a sale or are getting low on one type of food. Also several mini sessions in a row is a nice way for someone with a busy schedule to get a start.
Personally I prefer the third way.. mini sessions.. when my freezer is very low and I need to do a BIG session i do several minis over a 3-4 day period. one meat at a time. And I fill in with other mini sessions as needed.
