Every year, at this time, I stock up on the spring veggies on sale, especially asparagus. This will become a "veggie" plan later, but here you go:
I buy about 20-30 pounds of asparagus, usually at 99 cents a pound (I need to grow my own, but this way works for now!), I cut off the last 2-3 inches and I blanch them for a few minutes in boiling water, then let cool in ice water. Save all of the water! I pack most of this into sandwich baggies and then into ziploc gallon bags and freeze them. They microwave or steam nicely.
Make sure you save one bag, unfrozen, for asparagus soup! Use the boiling
water and the
ice water to make this. You can make cream of asparagus, asparagus-cheese
(with velveeta) or just a simple veggie soup. It tastes wonderful and can
be frozen too!
I do this with any veggie on sale: broccoli, cabbage, etc. I will post more ideas and recipes in a few weeks, hope this helps!
