Bunch O' Breakfast Bars

Well as folks get busier, one of the luxuries that sometimes goes, is a good breakfast. Unfortunately this is the most important meal of your day.  Below is a collection of breakfast bars that have been posted to various lists that I have been on. Whenever possible I have posted where the recipe was found. I have not tried all of these but from what I can see they should all freeze just fine.

"NOT" Kellogg's Nutrigrain Bars
Cereal type bars from Duncan Hines Bake Shop in a Box

1 pkg. yellow cake mix
3/4 cup butter
2 and 1/2 cups quick oats
12 ounces preserves or jam (any flavor)
1 T. water

Preheat oven to 375. Melt butter. Combine cake mix and oats in a large bowl; stir in the melted butter until the mixture is crumbly. Measure half of this mixture(about 3 cups) into a greased 13 x9x3 inch pan. Press firmly into pan to cover the bottom. Combine preserves and water; spoon over crumb mixture in pan, and spread evenly. Cover with remaining crumb mixture. Pat firmly to make top even. Bake at 375 for 20 minutes--top should be very light brown. Cool completely before cutting into
bars.

Apple Cranberry Bars

Serving Size : 48

1 1/2 cups granulated sugar
1 cup butter -- softened
2 eggs
2 teaspoons orange peel -- grated
2 teaspoons vanilla extract
2 1/4 cups all-purpose flour
1 teaspoon baking soda
1/4 teaspoon salt
2 cups peeled apples -- chopped
1 cup cranberries -- fresh or frozen
--coarsely chopped
1 cup chopped nuts
Orange Butter Cream:
1/3 cup butter -- softened
3 ounces cream cheese -- softened
1 teaspoon vanilla extract
2 cups powdered sugar
1 teaspoon orange peel -- grated
2 teaspoons milk -- to 4 teaspoons

Preheat oven to 350 degrees; grease a 15 x 10 x 1-inch jelly roll pan. In a large mixer bowl, combine the sugar, butter, eggs, orange peel and vanilla extract. Beat on medium speed, scraping the bowl often, for 2 to 3 minutes until well mixed. Reduce the speed to low; add the flour, baking soda and salt. continue beating, scraping the bowl often, for 1 to 2 minutes until well mixed. By hand, stir in the apples, cranberries and nuts. Spread in the prepared pan. Bake for 30 to 35 minutes, or until a toothpick
inserted in the center comes out clean. Cool completely. In a small mixer bowl, combine the butter, cream cheese and vanilla extract. Beat on medium speed, scraping the bowl often, for 1 to 2 minutes until well mixed. Reduce the speed to low. Continue beating, gradually adding the powdered sugar, orange peel and enough milk for desired spreading consistency. Thinly frost the cooled bars; cut into bars.

Banana Breakfast Bars

Serving Size : 1

3/4 cup soft butter or margarine
1 cup packed brown sugar
1 egg
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
1 1/2 cups mashed ripe bananas
4 cups uncooked regular or quick oats
1/2 cup dried currants -- raisins, prunes or
-- apricots
1/2 cup chopped nuts
1/2 cup sunflower seeds

Preheat oven to 350 degrees. Grease 13 x 9 x 2-inch pan. Cream together in large bowl, butter and sugar until fluffy, using electric mixer. Add egg, salt, cinnamon and bananas. With spoon, stir in remaining ingredients. Spread smoothly in pan. Bake 45 to 55 minutes or until cake tester comes out clean. Cool completely. Cut into 12 bars. Wrap individually, seal and freeze. Great way to use overripe bananas; makes a very nutritious "on the go" breakfast or snack.

Banana Cereal Bars

Serving Size : 1

1 1/2 cups Post Grape-Nuts brand cereal
3/4 cup all-purpose flour
1/4 cup firmly packed brown sugar
1 teaspoon cinnamon
1/2 cup butter or margarine
2 medium bananas -- mashed
1/2 cup nonfat dry milk
1/4 cup honey
1 egg -- beaten

Combine cereal, flour, sugar and cinnamon. Cut in butter until mixture is crumbly. Pat half of the mixture into greased 8-inch square pan. Combine bananas, nonfat dry milk, honey and eggs; spread in pan over crumb mixture. Top with remaining crumb mixture. Bake at 350 degrees for 30 to 35 minutes. Cool in pan. Cut into bars or squares and remove from pan. Makes about 16 bars.

Blueberry Oat Bars

Serving Size : 15

1 3/4 cups Quaker Oats -- uncooked
(quick or old-fashioned)
1 1/2 cups All-purpose flour
3/4 cup Brown sugar -- firmly packed
1/2 cup Chopped nuts
1/2 teaspoon Baking soda
1/2 teaspoon Salt (optional)
3/4 cup Margarine or butter -- melted
2 cups Fresh or frozen blueberries
1/2 cup Granulated sugar
3 tablespoons Water
2 tablespoons Cornstarch
2 teaspoons Lemon juice

Heat oven to 350 F. Grease 11x7-inch glass baking dish. Combine oats, flour, brown sugar, nuts, baking soda and salt. Add margarine, mixing until crumbly. Reserve 3/4 cup mixture; press remaining mixture onto bottom of prepared dish. Bake 10 minutes. Meanwhile, combine blueberries, granulated sugar and 2 tablespoons water. Bring to a boil, simmer 2 minutes, uncovered, stirring occasionally. Combine remaining 1 tablespoon water, cornstarch, and lemon juice; mix well. Gradually stir into blueberry mixture; cook and stir about 30 seconds or until thickened. Spread over partially baked base to within 1/4 inch of edge; sprinkle with reserved oat mixture. Bake 18 to 20 minutes or until topping is golden
brown. Cool on wire rack; cut into bars. Store tightly covered.

Cheerios Breakfast Bars

1/4 cup margarine
3 cups miniature marshmallows
1/2 cup peanut butter
1/2 cup dry milk
1/4 cup orange-flavored instant breakfast drink
1 cup raisins
3 cups Cheerios®

Butter a 9x9x2" pan. Melt butter & marshmallows over low heat, stirring constantly. Stir in milk, breakfast drink, and peanut butter. Fold in raisins and cereal, stirring until coated. With buttered hands, pat evenly in pan. Cool and cut into squares.

Breakfast Bars1

1/2 cup butter
1/2 cup brown sugar
3 cups cereal -- crushed
1 egg
1/2 teaspoon vanilla
1 pinch salt
1 teaspoon baking powder
1 cup flour

Mix together and pat into cookie sheet and bake at 350 degrees for 10 minutes. Cut while warm and spread cream cheese, when cool, on top and make sandwiches out of them.

Breakfast Bars 2

1/2 cup butter or margarine
3 cups miniature marshmallows
1/2 cup peanut butter
1/2 cup nonfat dry milk
1/4 cup orange flavored breakfast drink
1 cup raisins
4 cups cheerios -- kix or sugar jets

In large saucepan, melt butter and marshmallows over low heat, stirring constantly. Stir in peanut butter until melted. Mix in milk and breakfast drink. Remove from heat; fold in raisins and Cheerios, stirring until evenly coated. With buttered hands, pat evenly into buttered baking pan 9 x 9 x 2-inches. Place in refrigerator for 1 hour. Cut into 3 x 1-inch bars.
Note: Most ingredients - WIC or surplus food available.

Breakfast Bars 3

Makes : 36

1 1/4 cups quick oats
1 cup flour
1 cup sugar
1 cup coconut
1 cup nuts -- chopped
3/4 cup butter
1/2 cup brown sugar
1 cup strawberry or raspberry jam
1/3 cup sugar
1 egg
8 ounces cream cheese

Mix quick oats, flour, 1 cup sugar, coconut, nuts, butter and brown sugar until crumbly. Reserve 1 1/2 cup; pat remaining into 13 x 9-inch pan. Bake for 15 minutes. Cool for 5 minutes. Spread with jam. Beat 1/3 cup sugar, egg and cream cheese until smooth. Pour over jam; sprinkle with remaining crumbs. Bake for 20 to 25 minutes. Cool completely. Makes 36 bars.

Breakfast Fruit Bars

Serving Size : 20

1 1/2 cups uncooked oatmeal
1 cup flour
1/2 cup brown sugar, packed
1 teaspoon cinnamon
1/2 teaspoon baking soda
1/4 teaspoon salt
1 cup orange juice
1/4 cup vegetable oil
1 egg -- lightly beaten
1 teaspoon vanilla
6 ounces diced dried mixed fruit
2 tablespoons oats

Combine 1 1/2 cups oats, flour, sugar, cinnamon, soda and salt. Combine juice, oil, egg and vanilla and add to dry ingredients. Mix well. Stir in fruit. Spread into a 13x9 inch pan that has been sprayed with no-stick cooking spray. Sprinkle with remaining oats. Bake at 375 for 20-22 minutes or until lightly browned and edges pull away from sides of pan. Cool completely. Cut into bars. Store tightly covered. (Bars may also be frozen in individual bags. Thaw at room temperature or microwave on high for 30 seconds per bar.) Makes 20 bars.

Breakfast Granola Bars

2 cups granola
2 each eggs -- beaten
dash vanilla, optional

Combine the granola and eggs in a greased 8" square pan. Bake at 350 for 15 minutes. Cut into 8 bars. When serving spread with jam, honey or peanut butter.

Breakfast in a Bar

1 cup Brown sugar -- , packed firm
1 Egg
1/2 cup Margarine -- , melted
2 cups Quick-cooking oats
1 teaspoon Baking powder

Combine all ingredients and press into a greased 9x9-inch pan. Bake at 350 deg. F for 20-25 minutes. Mixture will harden as it cools. Cut into squares when cool.

Cornflakes and Apples Breakfast Bars

Serving Size : 10

1 c cornflakes or wheat flakes -- crushed
1/3 c brown sugar -- packed
2 tbsp butter -- melted
1/2 c grandulated sugar
1/2 c vegetable shortening
1 c applesauce
2 c flour
1 tsp baking soda
1/2 tsp salt
1 1/2 tsp cinnamon
1 tsp nutmeg
1 c raisins or chopped dried apples

Combine the crushed cornflakes, 1/2 cup brown sugar, and melted butter in a small bowl; use your fingers to blend the mixture, then set aside. In a large mixing bowl, cream together the two sugars and the shortening until fluffy. Mix in the applesauce and set aside. In a smaller bowl, combine the flour, baking soda, salt, cinnamon, and nutmet. Stir these dry ingredients into the applesauce mixture and fold in the raisins.

Spread the mixture in a greased 10x15x1" or similar size pan. Sprinkle the batter evenly with the cornflake mixture. Bake at 350 for about 20-30 minutes, or until a knife inserted in the center comes out clean. Cool in the pan, then cut into bars.

To Serve: These hearty bars will store well in their covered pan for a full week, or you can package them individually in sandwich bags and freeze them; they can thaw overnight in time for breakfast, or they will thaw in 1 hour at room temperature.

Granola Breakfast Bars

Serving Size : 24

1 quart rolled oats
1 1/2 cups flaked coconut
1 1/2 cups peanut granules
1/4 pound butter or margarine
1/2 cup light brown sugar
1/2 cup honey
1 tablespoon vanilla
1 cup wheat or bran flakes
1 cup raisins

In 12 x 20 x 2-inch pan, stir together oats, coconut and peanuts. Bake in 350 degrees oven for 20 minutes; stir occasionally in pan. In saucepan, stir together butter, sugar and honey. Place over medium heat until butter melts. Remove from heat; stir in vanilla. Drizzle butter mixture over oat mixture. Add cereal flakes and raisins; toss evenly. Press mixture into greased pan and bake an additional 5 minutes. Let cool in pan; cut into 24 bars.

Lo-Cal Breakfast Bars

Serving Size : 1

1/2 cup diet margarine
3/4 ounce shredded wheat
1 1/2 cups raisin bran
1/2 cup grape-nuts
3 ounces oats
1 cup evaporated skim milk
1/2 cup unsweetened applesauce
1/2 cup unsweetened crushed pineapple
1/2 cup plus 2 tbsp. raisins
2 tablespoons orange juice concentrate
1/3 cup nonfat dry milk powder
4 teaspoons cinnamon
1 teaspoon nutmeg
4 teaspoons shredded coconut
2 teaspoons coconut extract
2 teaspoons baking soda
1/8 teaspoon salt

Mix all together and bake for 30 to 35 minutes at 350 degrees. (Counts as the following exchanges: 1 1/2 fat, 1 fruit, 1 cereal, 1/2 milk). Makes 8 servings.

Nutritious Breakfast Bars

Serving Size : 1

1 cup butter or margarine
1/2 cup molasses
2 cups whole wheat flour -- unsifted
2 teaspoons baking powder
1 cup uncooked oatmeal
1 cup chopped walnuts
1/2 cup brown sugar
4 eggs
1 cup wheat germ
1/2 teaspoon salt
1 cup raisins

In bowl, cream shortening until light. Beat in sugar and molasses. Beat in eggs, 1 at a time. Blend in unsifted flour, wheat germ, baking powder and salt, mixing well. Stir in oats, raisins and nuts. Spread evenly in greased 9 x 13 x 2-inch baking pan and bake for 30 minutes in preheated 350 degrees oven. Cool in pan. Cut into bars. Store in tin or wrap well in foil. Store in refrigerator or freeze to be used as desired.

Sugar-Free Breakfast Bars

Serving Size : 1

1 tablespoon peanut butter
1 ounce or more oatmeal
1 teaspoon honey
raisins (optional)
2 tablespoons liquid coffee or water
1 package sugar free nestle quik
1/3 cup powdered milk

Mix and freeze in plastic wrap or foil. May eat as a breakfast or make into small candy bars. Very good substitute for fattening candy bars.
